I cut the flower buds off mine last year as it was its first season, as I thought it might push energy into the plant?roots more. I remember seeing a thread on here where someone else had done the same.

this year mine has masses of flower buds which will be out very soon. This year I shall let the flowers bloom as the tree and roots are very healthy. However, rightfully or not, I will not let the berries set as I want to refine it and a slip pot into a semi cascade pot.

It is naturally hedging material. That means it responds well to the Walter Pall hedge pruning method. Which is what I'd do with it.

Important to let it grow, grow, grow. Then you can start to play with the options that develop.

Can the thorns be cut off does any one know, and will they stay off?

You can cut them off. Sometimes they send out leaves from the cut site.

If you don't cut them off they can prick you and it hurts! If I'm doing a pruning session on one I usually spend the first part carefully cutting the tips off the thorns. You'll get new thorns the following year.

It looks great! Just enjoy it like that for the next 10 years, and enjoy the flowers and berries that you'll get!
Maybe let the first two branches grow wild for a couple of years to try increase the trunk taper.
