We used to keep our guinea pig cage outside from spring to autumn and the slugs used to slither into their cage a lot. Then we found that a thick line of salt all the way around stopped them. Table salt. Not expensive and not too harmful for the sourroundings.
Worth a try?

Reading between the lines, I think your tree is dying due to root issues. Maybe I'm jumping to conclusions, but it sounds to me that the tree is trying to push growth that it cannot support, the tiny specs of green subsequently dry up and drop off.

Water only when necessary rather than every day. Maybe a sweat bag might help maintain humidity.

It does kind of feel there's something more than just the slugs but the leaves just disappear and there's no sign of any dead leaves after they're gone. I can put a bag over it to keep in the humidity, now it's in the shade it shouldn't bake. I could remove it from the pot and take a look at the roots but I'm wary of doing anything that might upset it even more...
